Summer Dessert

I can always tell that summer is here because the rhubarb in my garden is going TOTALLY crazy! I've already made 4 rhubarb crisp desserts and brought rhubarb to at least 5 people and there's still so much I don't know what to do with it. When summer starts, I typically make at least one crisp a week to bring to Metropolis Resort to share in the office or to my family because it is just so good but there's no way i can eat that all on my own. Luke, my boyfriend doesn't eat sweets so I have to share with someone!
Rhubarb crisp is literally the only thing I bake because it is just so easy and always turns out so good. Take a peak at the recipe I use (seriously so easy) that really kick starts my summer. Ingredients
Rhubarb Layer
- 4 cups of rhubarb cut into 1/2" pieces
- 1 cup sugar
- 1/3 cup flour
- 1/2 tsp cinnamon
Topping
- 1/2 cup butter, melted
- 1/2 cup old fashioned oats
- 1 cup flour
- 1 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
Instructions
- Heat oven to 375 degrees.
- Mix rhubarb, sugar, 1/3 cup flour and 1/2 tsp cinnamon in an 8" x 8" glass baking dish
- Mix butter, oats, 1 cup flour, sugar, salt and 1/2 tsp cinnamon in a medium bowl.
- Sprinkle topping over rhubarb mixture.
- Bake for 30 minutes – 35 minutes
